Ingredients

  • 2 tablespoons olive oil

  • 4 large cloves garlic, minced

  • 10 oz baby spinach (pre-washed)

  • 1/2 teaspoon salt

  • 1/4 teaspoon fresh cracked black pepper

  • juice from half a lemon

  • 1 Tablespoon unsalted butter (optional)

Directions

  • In a large pan, heat the olive oil and saute the garlic over medium heat for about 1 minute until it’s soft and fragrant, but not browned.
  • Add the spinach, salt, and pepper and toss to coat with the garlic oil. Cook for about 3-5 minutes, stirring occasionally until all the spinach is wilted.
  • Squeeze half a lemon over the spinach, making sure to not get any seeds into the pan. Add pat of butter if using, give spinach a final stir, and transfer to a serving dish. Enjoy!
